Pickles



Pickling Techniques

  • Always use young fresh vegetables, wash and drain well, removing any damaged portions or tough Stalks. Select the seasonal vegetables.
  • Avoid use of wet hands or spoons, while transferring pickles into small containers.
  • Wipe bottles from inside with a cloth dipped in hot slated oil preferably before storing pickles to keep the pickle fungus free.
  • Keep an eye on the pickles after you have stored them and check for any bubbles. Add more salt on the top surface and sun for a few more days.
  • Use pure salt, free from additives, otherwise the pickle gets cloudy.
  • Pickles should be mixed and prepared only in stainless steel bowls. Store the pickles only in glass jars.
  • Store pickle jars in a cool, dry and dark place.
